Origin Story
This coffee comes from Alo Village in Bensa, Sidama, one of Ethiopia’s highest and most respected coffee-growing areas.
The Chilaka Processing Station is operated by Tamiru Tadessa, the 2021 Cup of Excellence Champion, in his hometown. Cherries are sourced from eight nearby farms, all located above 2,400 metres, contributing to exceptional floral clarity and sweetness.
Why does this coffee taste so unique?
After depulping, the coffee undergoes dry fermentation for 36–48 hours, depending on ambient conditions. Fermentation takes place in a cool environment, with temperatures averaging around 10°C, allowing for slow and controlled flavour development.
Selected lactobacillus isolated from the coffee cherries is introduced during fermentation to enhance body and smooth mouthfeel. The coffee is then fully washed and dried on African beds for 12–14 days, preserving the delicate floral and fruity character of the 74158 variety.
