Origin Story

Caranavi sits within Bolivia’s lush Yungas region — a dramatic landscape of steep mountains, rich soils, and wide daily temperature shifts.

For generations, coffee here was sold into the local market at low prices. But over the past decade, families like the Mamanis began transforming their approach to farming.

Through their long-term partnership with Agricafe’s Sol de la Mañana program, the Mamani family adopted structured agricultural practices — selective picking, soil management, yield planning, and controlled processing.

Today, they are recognized as leaders within their community — not only producing exceptional coffee, but helping elevate regional standards.

This lot represents that evolution: tradition supported by precision.

 

Process Story

This coffee is processed as a washed lot with a 35-hour fermentation in sealed stainless-steel tanks.

After harvesting only fully ripe cherries, the fruit is sorted, disinfected, and depulped at Buena Vista mill. The coffee is then placed into closed tanks where oxygen exposure is limited.

By reducing oxygen, microbial activity becomes more controlled and stable. Natural yeasts break down sugars slowly and evenly, enhancing sweetness and structure without creating excessive funkiness.

After fermentation, the coffee is carefully washed and dried with consistent airflow to preserve clarity and balance.

The result is a clean, winey profile with refined structure.
