Process Story (Customer-Friendly but Technical)
This coffee is processed at Buena Vista Mill under the Agricafe program, known for precision fermentation control.
After careful handpicking at peak ripeness, cherries are sorted, disinfected, and depulped using water-efficient machinery.
The wet parchment is then placed into sealed stainless-steel tanks for 42 hours of controlled fermentation.
The tanks remain closed to prevent oxygen exposure, allowing natural yeasts and bacteria to break down sugars in a stable, controlled environment.
After fermentation, the coffee is washed clean and machine-dried slowly to preserve clarity and sweetness.
Why This Coffee Tastes Clean Yet Complex
• High altitude (1,650m) = slow cherry maturation → higher sugar concentration
• Controlled fermentation = structured acidity, not wild or funky
• Washed finish = clarity and transparency of terroirThis results in:
- Creamy texture
- Bright citrus acidity
- Refined plum sweetness
- Smooth milk chocolate finish
- Balanced, elegant, and structured.
Origin Story
Las Alasitas farm is located in Caranavi, Bolivia, part of the fertile Yungas region of the Andes.
The name “Alasitas” means “Buy Me” in the local Aymara language.
It refers to a traditional Bolivian festival celebrating abundance and dreams coming true.
The farm was built as a model farm by the Rodriguez family, aiming to elevate Bolivian specialty coffee through research, data tracking, and sustainable agriculture.
Every lot is carefully documented — tank types, microbial activity, temperature, weather — to refine future harvests.
This coffee represents:
- Precision
- Heritage
- And a long-term vision for Bolivian specialty coffee.
