This Java variety comes from Acevedo, Huila, a region known for volcanic soils, high altitude, and exceptional sweetness.
Produced by Jhoan Vergara, this competition lot combines traditional varietal character with innovative processing, resulting in a cup that is bold, juicy, and refined.

Why does this coffee taste so unique?

This coffee uses a Duo Cherry process, where semi-dried cherries are combined with freshly picked cherries and depulped together. The natural sugars and moisture from fresh cherries enhance fermentation and flavour development.

The coffee then undergoes mosto fermentation and thermal shock, followed by controlled anaerobic fermentation and precision drying. This creates a velvety mouthfeel, intense cherry sweetness, and layered tropical fruit complexity, while keeping the cup clean and balanced.
