Danche is located in the renowned Yirgacheffe region of Southern Ethiopia, an area celebrated for producing some of the world's most expressive and floral coffees.
The coffee is sourced from smallholder farmers cultivating traditional Ethiopian heirloom varieties at elevations between 1,950 and 2,200 meters above sea level. The combination of rich soils, cool temperatures, and slow cherry maturation creates coffees with exceptional aromatic complexity and clarity.
While Yirgacheffe is traditionally known for washed coffees, this lot showcases a rarer expression through the Red Honey process, highlighting sweetness and texture while preserving the region's signature floral character.
Process Story
This coffee is processed using an environmentally friendly Red Honey method, a relatively uncommon approach in Ethiopia.
After harvesting, ripe cherries are delivered to Danche Washing Station where sugar content is measured using a refractometer to ensure optimal ripeness. Floating cherries are removed before the coffee undergoes approximately 48 hours of controlled fermentation.
The cherries are then depulped while intentionally retaining most of the fruit mucilage around the parchment. This remaining layer of natural sugars dries together with the coffee, contributing to greater sweetness, body, and complexity.
The coffee is slowly dried on raised African beds under increased shade for 14–18 days, allowing flavours to develop gradually and evenly. Frequent turning ensures consistent drying until the coffee reaches a final moisture content of approximately 11.5%.
The result is a profile that sits beautifully between washed and natural coffees — combining the clarity and structure of washed processing with the sweetness and texture often associated with naturals.
