Origin Story

The Wuri Washing Station is located near Gedeb in the Gedeo Zone, one of Ethiopia's most renowned coffee-growing regions.

The area is famous for producing some of the country's highest-scoring coffees thanks to its rich volcanic soils, consistent rainfall, and elevations reaching over 2,100 meters above sea level. These conditions slow cherry development, allowing sugars and aromatic compounds to mature gradually, resulting in exceptional cup complexity.

Coffee production here is deeply woven into local culture, with generations of farming knowledge helping preserve Ethiopia's reputation as the birthplace of Arabica coffee.

 

Producer Story

This lot is sourced from approximately 650 smallholder farmers cultivating coffee around the Wuri Washing Station.

Most producers farm small plots of land where coffee is grown alongside native vegetation and food crops. Ripe cherries are selectively handpicked and delivered daily to the washing station during harvest.

Through careful cherry selection and meticulous processing, Wuri has established a reputation for consistently producing some of the finest washed coffees from the Gedeb region.

Coffee Lineage

Ethiopian Heirloom varieties represent one of the most genetically diverse coffee populations in the world.

Unlike many producing countries that rely on a small number of cultivars, Ethiopia remains home to thousands of naturally occurring coffee varieties. This remarkable biodiversity contributes to the floral aromatics, vibrant fruit notes, and complexity that have become hallmarks of Ethiopian coffee.

These heirloom varieties thrive in the highlands of Gedeb, where cool temperatures and fertile soils allow them to express exceptional clarity and sweetness.

 

Process Story

Only ripe cherries are delivered to the Wuri wet mill, where they undergo careful sorting before processing.

The cherries are depulped and fermented for approximately 36–48 hours, depending on climatic conditions. Following fermentation, the parchment coffee is thoroughly washed and separated by density to improve consistency and quality.

Drying takes place on raised African beds for approximately 12–15 days. During this period, the coffee is regularly turned and protected from excessive heat and rainfall to ensure even drying and preserve delicate flavour compounds.

Once optimal moisture content is reached, the coffee is transported to Addis Ababa for final milling, hand-sorting, and export preparation.
