Why does this coffee taste so unique?

This coffee undergoes a multi-stage, precision-controlled fermentation using Biomaster technology.

Cherries are first fermented anaerobically, followed by oxidation and a second anaerobic stage inside the Biomaster, where temperature, pressure, and microbial activity are tightly controlled. The coffee is then submerged in a mosto solution and finished with a thermal shock to stabilise flavour.

This process enhances berry intensity, aromatic florals, and clarity, while preserving balance and cleanliness.
