Story Behind the Farm

Finca Calahute — meaning “Free Deer” — is a beautiful third-generation family farm run by Alfonso Anzueto. Established in 1952 in the lush hills of San Pedro Necta, it stands out for its balance of heritage and innovation. Alfonso grows mostly Bourbon, along with a mix of Caturra, Pacamara, and even small plots of rare Ethiopian heirlooms — all thriving under a natural forest canopy.

Every corner of Calahute feels alive — shaded by native trees, buzzing with bees, and surrounded by butterflies. It’s a place where biodiversity and quality go hand in hand, and where Alfonso’s care brings out coffees that are sweet, clean, and deeply comforting — just like the best washed coffees from Huehuetenango should be.

 

Processing & Quality

Harvested from December to April, each cherry is hand-picked for perfect ripeness. At the farm’s traditional wet mill (built in 1958), the coffee is pulped, fermented for 24–36 hours, washed, and dried slowly on patios for up to 12 days. This careful process preserves clarity and sweetness, allowing its chocolate and nutty tones to shine.
