The Story Behind the Coffee
Since 2016, the Bayter family has been pioneering specialty coffee at El Vergel Estate in Tolima, planting unique varieties and constantly pushing boundaries. In 2018, they embraced natural and controlled fermentation methods, driven by curiosity and precision.
Led by Martha Montenegro with Elias and Shady Bayter, the team blends technology, innovation, and passion — not just to elevate cup quality, but to uplift their entire coffee-growing community.
Today, their company Forest Coffee connects over 250 farming families across Colombia, reshaping what modern Colombian coffee can be.
Process Innovation
For this lot, cherries underwent 96 hours of CO₂ maceration at up to 6 bars of pressure, gently breaking down the cascara and encouraging deep, even fermentation in a fully anaerobic environment. Afterward, the coffee was sun-dried on raised beds for 25 days and stabilized for 45 days in GrainPro bags before milling — a meticulous process that brings out its silky texture, floral aromatics, and elegant sweetness.
