Processing & Fermentation
After depulping, the coffee undergoes yeast-guided fermentation in custom-built stainless steel tanks at Lost Origin Coffee Lab.
Fermentation is carefully controlled using selected yeast strains and fermentation media, under low-temperature conditions to preserve clarity and floral expression. The coffee is then dried slowly in temperature- and humidity-regulated drying rooms, ensuring even moisture reduction and flavour stability.
This precise approach enhances aromatic lift, juiciness, and sweetness, while maintaining a clean and elegant Geisha profile.

Lost Origin Coffee Lab was founded by Franz Zeimetz, a former craft brewer who applies fermentation science and microbiology to coffee processing.
The lab is equipped with:
