Processing & Drying
Only perfectly ripe, deep-red cherries are handpicked under strict hygiene standards and transported in baskets to prevent damage.
Cherries are first floated using pure spring water sourced from within the Volcán Barú National Park, then hand-sorted to remove defects.
For natural processing, cherries are:
Pre-dried for 24 hours
Slowly dried on African raised beds covered with UV film for 30–40 days
Dried in thin layers to ensure even moisture reduction
Drying temperatures range from 15°C at night to 26°C during the day, with humidity naturally regulated through solar-powered systems.
No accelerators, yeast, fruit, or aggressive fermentation techniques are used — the process relies entirely on time, altitude, and climate.
Terroir & Sustainability
Mil Cumbres sits on the slopes of the Barú Volcano, less than 31 miles from both the Pacific Ocean and the Caribbean Sea.
This unique geography creates a rare thermal exchange, cloud cover, and slow cherry maturation — key to the coffee’s aromatic clarity and balance.
Out of 60 hectares, only 25 hectares are planted with coffee.
The remaining land is preserved as native jungle, forming part of the national park and supporting rich biodiversity.
Farming follows biological and environmentally responsible practices.
While not certified organic, chemical use is minimal and applied only when absolutely necessary, with most work done through manual labor and biological methods.
About Mil Cumbres
The name “Mil Cumbres” means “a thousand hills”.
Originally an old cattle pasture, the land was carefully restored and transformed into a specialty coffee farm by reactivating historic timber trails and preserving the surrounding forest.
Owned by Mario Fonseca and Arturo Klein, Mil Cumbres released its first coffee in 2019 and has quickly gained recognition for its purity, environmental stewardship, and exceptional quality.
All Geishas are processed on-site in small batches, allowing meticulous quality control and consistent excellence.
