Gesha – Jardines del Encanto

This lot began with a 24-hour dry aerobic fermentation, followed by 50 hours in GrainPro bags at a carefully controlled temperature below 22 °C. The whole cherries were then laid on raised African beds to slowly dry until the perfect moisture content was reached.

The Gesha varietal was first identified in Abyssinia, Ethiopia, in 1931. It reached Panama in 1963, later spread to Colombia in 2005, and we planted it in 2019 at Jardines del Encanto. The unique soil and altitude of our farm nurture this variety beautifully, giving rise to a profile that is sweet, floral, and layered with complexity.

Cupping Notes: lavender, lemongrass, red fruits, apple, orange candy.
