Sidra – Jardines del Edén

This Sidra lot is crafted with uncompromising attention to detail. Harvested only at peak ripeness, cherries are floated and carefully hand-sorted to ensure absolute purity. They undergo a 30-hour underwater fermentation before being pulped, then the parchment is gently washed and dried under temperature-controlled conditions, allowing the coffee to reach its perfect balance of structure and sweetness.

The Sidra varietal, a rare hybrid of Bourbon and Typica, is celebrated for its sweet, bright, and floral profile. Said to have originated in Ecuador, Sidra trees are medium in height with high yields, producing vibrant red cherries. While tolerant to leaf rust and drought, they remain delicate in the face of pests — making every successful harvest all the more prized.

We first encountered Sidra in 2017, and its expressive character captivated us instantly. By 2019, we committed to planting Sidra at our Jardines del Edén farm, where the terroir and altitude elevate its qualities into a cup of remarkable elegance and complexity.
