Origin Story
This coffee comes from Alo Village in Bensa, Sidama, one of Ethiopia’s highest-altitude coffee-growing areas.
Produced by Tamiru Tadessa, a Cup of Excellence champion, this lot reflects meticulous cherry selection, extreme elevation, and a focus on slow, controlled processing to express the delicate complexity of the 74158 variety.
Why does this coffee taste so unique?
Ripe cherries are carefully handpicked and sealed in anaerobic tanks for 120 hours of cold fermentation. The low-temperature environment slows microbial activity, allowing flavour complexity to develop with clarity and balance rather than intensity.
After fermentation, the cherries are dried on African raised beds for 25 days, with frequent turning to ensure even drying. Beds are covered during peak sunlight to protect aromatics. Once the coffee reaches 11–11.5% moisture, it is rested for a minimum of 45 days before milling, enhancing sweetness, structure, and aromatic depth.
